Brown Rice Salad Recipe

Brown Rice Salad

 

7 cups cooked brown rice

6 spring onions

1 red pepper (capsicum), diced

1 cup currants

170 g roasted cashew nuts

2 Tbsp roasted pumpkin seeds (pepitas)

* 6 Tbsp soya sauce dressing (below)

3 Tbsp chopped parsley

 

     * Soya Dressing*

·  3/4 cup olive oil (I leave out and add more soy/lemon/water instead)

·  4 Tbsp soy sauce

·  2 Tbsp lemon juice

·  2 cloves crushed garlic

·  salt & peper

·  1 Tbsp honey

 

Cook rice in boiling water 30-40 min.

Rinse well

Chop spring onions finely

Add remaining ingredients

 

Serves 8-10 people
